Hot Cup Memory

Most cups open as they cool. Hot Cup Memory describes the opposite condition — the most concentrated, most characteristic expression of the cup occurs in the early high-temperature phase. As temperature drops, the cup does not develop further. It settles into a quieter, more integrated sweetness.
